Stuffat Tal-Qarnit recipe, make your own Maltese traditional octopus stew
Octopus is quite common in Maltese cuisine, you can buy some very fresh at the fish market in Marsaxlokk and follow this easy recipe to have a real taste of Maltese fishery traditions. This stew may be served hot over spaghetti or as a main course by adding 1 lb of peeled and quartered potatoes at the beginning of cooking time.
Ingredients to make your own Stuffat Tal-Qarnit:
1 1/2 lb octopus
2 tbsp oil
3 onions, chopped
1/2 lb peas
3 garlic cloves, crushed
2 tbsp tomato paste
1 carrot, grated
8 black olives
pinches of: basil, oregano, mint
1 cup of red wine
dash of Worcestershire sauce
pepper to taste
Don't worry, it's easy preparing Stuffat Tal-Qarnit:
Cut octopus into bite-size piece. Chop onion and garlic and slightly fry them with olive oil in a pot.
Now add octopus and all the other ingredients, and cook for about an hour over medium heat or until octopus is tender.
