Lampuki Moqlija recipe, cook your own Maltese traditional fried fish
Lampuki is a fish that is caught by experienced Maltese fisherman, with a peculiar technique: after throwing the fishing nets at a certain depth, they lay palm fronds on the water to provide shade the fish craves. The fish looking for some shade get caught in between the nets and the palm fronds, and it is ready to be cooked and enjoyed in all its freshness!
Ingredients to make your own Lampuki Moqlija:
800g.Lampuki
vinegar
salt and pepper
olive oil
lemon
flour
Don't worry, it's easy to prepare Maltese Lampuki
Cut off the head and tail of the fish and clean carefully of bones. Wash and cut the fish into four portions and pass it through the sifted flour. Season with salt and pepper and fry both sides on a very low heat till golden. Serve with lemon and fresh salad and chips. You can buy fresh Lampuki from the Marsasaxlokk fish market every Sunday.
